To a large extent, the appearance of the salad will depend on the softness of the avocado. The soft fruit will make the dressing thicker, as the avocado slices will become more like a paste when mixed.

Vegetable salad with avocado and olives is best prepared just before serving. The dish does not need to be soaked, infused … It is also not worth storing it for a long time, so calculate the portion so that the salad does not remain the next day.

Olives are certainly easier to take pitted, and olives with different fillings will add an interesting accent. However, pitted olives have a special, brighter, in my opinion, rich taste.

Peel and finely chop the red onion, add salt, stir and set aside.

Rinse the bell pepper, remove the core, cut the pulp into small cubes and place in a spacious bowl. Add chopped parsley.
