Cut the cucumber into circles.

Tomato - in large cubes.

Red pepper is the same.

Cut the onion into thin rings.

Combine vegetables in a bowl, add mozzarella, fresh herbs, salt, pepper, pour in vegetable oil to taste.

Break eggs into a separate bowl, pour in milk, add spices: salt, pepper and Provencal herbs.

Beat with a fork until smooth.

Fry the omelet in a little vegetable oil in a well-heated frying pan until the eggs are cooked.
