Red onion - 1 pc.

Milk - 2 tablespoons

This is not just a vegetable salad, it is a complete and very healthy dinner dish. As you understand, we will serve salad, in my case Greek, right in the omelet. By the way, the salad can be anything. But it is better to take fresh vegetables and herbs: cabbage, celery, carrots, and lettuce will do. I love Greek salad for its taste and satiety, so I consider it the best option in this dish. Ready to cook? Then let's get started!
Cut the cucumber into circles.
Tomato - in large cubes.
Red pepper is the same.
Cut the onion into thin rings.
Combine vegetables in a bowl, add mozzarella, fresh herbs, salt, pepper, pour in vegetable oil to taste.
Break eggs into a separate bowl, pour in milk, add spices: salt, pepper and Provencal herbs.
Beat with a fork until smooth.
Fry the omelet in a little vegetable oil in a well-heated frying pan until the eggs are cooked.
Put the ready-made slightly cooled omelet into a serving bowl, beautifully distributing it over the dish. Put the prepared salad in the center and serve it to the table. Enjoy your meal!
