This easy-to-prepare salad with an Asian flavor can be served on weekdays and holidays. It looks bright and elegant, but it doesn't take long to prepare.
Seafood goes well with citrus fruits and a pair of "tangerine + shrimp" perfectly complement each other. In this recipe, the taste is set by the tangerine, which is present both in the dressing and as the main ingredient. The cucumber will add freshness, and the salad mix will add brightness and benefits.
Let's prepare the ingredients for the shrimp and tangerine salad. The amount of tangerines depends on their size and juiciness. I needed one tangerine to get the right amount of juice for the dressing, and two tangerines for the salad.
You can take any salad greens to taste, rinse it and leave it on a sieve to drain excess water, and then spread the leaves on a paper or cloth towel to dry completely.
If the shrimps are frozen, then they must be defrosted in advance.
For the dressing, or rather for its base, squeeze the juice from the tangerine, add the finely chopped ginger root and heat the mixture until the first signs of a boil, then remove the dressing from the heat and let it cool and brew completely.
Then strain the base, add 2 tbsp. olive oil, salt and pepper, mix. The filling is ready.
Heat the remaining olive oil in a skillet over medium heat, put the shrimps in one layer and quickly fry them on both sides until golden brown.
I used boiled frozen shrimp, so frying them takes 2-3 minutes. At the end of frying, season the shrimp with salt and black pepper, then transfer them to a paper towel and let cool.
Put the salad mix in a deep bowl, if the leaves are large, tear them with our hands. Cut the cucumber into strips and add to the herbs.
Put cooled shrimps here. Peel the tangerines, remove all white fibers as thoroughly as possible. Cut each tangerine slice into 2-3 parts and add to the rest of the ingredients.
Grate the cheese on a coarse grater, add to the salad and mix everything.
Just before serving, add the dressing to the salad and mix again. Salt the salad if necessary.
Shrimp and tangerine salad is ready, it can be served in portions or on a large plate.
