But the sauce has a really interesting look! Despite the fact that lemon juice is transparent, and vegetable oils are also, when they are mixed by whipping, an opaque emulsion is obtained. And now pouring it over a salad in front of guests (or putting it on the table) - this, you see, looks more interesting.

Prepare the ingredients for the lemon salad dressing.

Lemon salad dressing can be made with virtually any vegetable oil. But in fairness, I note that olive has a sharper taste than sunflower, so it is better suited to the set of herbs used in southern cuisine (basil, thyme, rosemary, oregano). When choosing oil, we choose the general flavoring direction of the salad.

A plant that any oil is suitable for in combination with lemon juice is dill.

For delicate salads, in which the taste of herbs and spices should not dominate (parsley, chervil, mint), oils with a weaker taste are better suited - refined vegetable oil, sprout oil …

However, all this, of course, is purely recommendatory. The most important thing in a lemon salad dressing recipe is not the oil, but the ratio of liquids and the way it is mixed.

The first step in making this sauce is to cut the lemon in half and squeeze the juice out of it.

And then we remember the proportion: for 1 part of lemon - at least two parts of oil. Three can be. Less is impossible, the emulsion will not work. That is, for 10 ml of lemon juice - 20-30 ml of oil. For 1 tablespoon of juice - 2-3 tablespoons of oil, etc. etc.

We put both oil and juice in a small container with a lid. Liquids in this container should be spacious. The order of infusion does not matter.

We close the jar with a lid and just shake it in our hand for a minute or two until an opaque emulsion is obtained.
