In this workshop we will show you how to make shake maki rolls at home. We use lightly salted fish, rice, nori and wasabi.

Sake maki are the simplest and most low-component rolls. All you need is nori, rice and fish. Well, more makisa / mat and knowledge of Japanese tricks for folding rolls:)

Cook rice for sushi (or round grain Krasnodar): rinse the rice thoroughly with cold water, pour cold water in a ratio of 1 part rice and 1.25 parts water, bring to a boil and cook for 14 minutes under a lid over low heat. Do not open the lid! Then gently loosen the rice, sprinkle with rice vinegar if desired. Cook the rolls from warm rice or room temperature.

Cut the nori sheet into 2 halves. shake maki rolls of small diameter, if you do not want, of course, to make a "snail" roll … Wrap the maki with cling film, put the nori on it with the glossy side down. Moisten your hands with acidified water, take a serving of rice and smooth it over the nori with a thin layer, but leave about 1 cm from the edge without rice.

Lightly salted fish (I do not risk and do not recommend eating completely raw fish …), clean it from the skin and bones and then cut into oblong pieces, about 1 cm in cross section.

Place the pieces of fish in the middle of the rice. Brush the fish with wasabi if desired …

Using the makisa, start rolling the roll away from you.

For a proper roll with a filling in the middle and rice around, you need to try to connect the rice at the edges as closely as possible to each other. It is not difficult, they will practically connect by themselves, you just need to adjust a little.

The left edge of the nori without rice will turn around, stick and fix the roll. Crimp the roll with makisa to make it round or square as you wish.

The syake maki is ready.

Trim the edges of the roll and cut it into pieces moistened with a sharp knife with a light and non-pressing motion.

Serve shake maki with pickled ginger and soy sauce.
