Video recipe: A spicy tomato appetizer for the winter

Step by step recipe with photos and videos

This dish pleases and warms us on winter evenings for years. A juicy vegetable appetizer with a spicy hint of hot pepper, it is good with bread and hot soup. I also use it as a pasta sauce. It is customary for us to call it adjika, simply because we call everything spicy and red adjika. It is actually a tomato appetizer with hot red peppers as an ingredient, making the dish taste very similar to Georgian spice.

The number of ingredients in this dish is a very conditional thing. That is, nothing critical will happen if instead of 250 grams of onion you take 300. Minor errors with ingredients such as tomatoes, onions, carrots and bell peppers are acceptable. But with garlic and hot pepper, be careful. Especially with the last component. By putting 4 pods instead of 5 this time, we got a spicier dish than usual. Therefore, in the preparation of a spicy tomato snack for the winter, there is always a share of experiment, because you do not know what the taste will be.

We wash the tomatoes and cut each into several parts.

Cut the carrots into large pieces.

Cut the onion into 4 pieces.

Cut the pepper at random.

Remove seeds from hot pepper pods, and also cut a vegetable.

Scroll all the ingredients through a meat grinder into a convenient bowl. Then we shift everything into a large bowl for cooking snacks. Pour in vegetable oil, add salt and sugar. Stir and put on a small fire.

Stir occasionally, cook for 2.5-3 hours.

With every minute the liquid in the mass will become less, the snack will thicken.

At the end of cooking, the mass should keep its shape and not spread along the bottom of the basin.

We put the appetizer on pasteurized jars, cover with lids, cool and store in the refrigerator until winter.

A spicy tomato appetizer for the winter is ready! You can serve the dish with bread or as a sauce. Enjoy your meal!

Important additions to the recipe

For ease of preparation, I advise you to rinse and peel the vegetables in advance.

  • The cooking time can be different each time, depending on the juiciness of the vegetables, so you need to determine it already in the process, focusing on the consistency of the mass.
  • You can also vary the cooking time based on the desired thickness of the finished dish. By keeping the mass on fire a little longer, you will end up with a thicker snack.
  • It is most convenient to pasteurize cans by pouring boiling water into each for a few minutes, then turn over and put the top to cool and dry on a towel. It is enough to hold the lids in hot water.
