Pumpkin caviar is a delicious and very bright lean appetizer (vegetable sauce) that will appeal even to those people who like pumpkin. Try it!

Ingredients

Pumpkin - 300 g

Carrots - 1 pc.

Onions - 1 pc.

Vegetable oil - 30 ml

Vinegar 9% - 1 tsp

Salt - 2-3 pinches

Ground black pepper - 2-3 pinches

Garlic - 1-2 cloves

To be honest, I used to treat pumpkin as a product from which only sweet dishes are excellently obtained! But after I cooked this pumpkin caviar, my culinary worldview for this vegetable changed radically! It is so tasty that I myself washed up all that caviar mass, cooked for four, and had to cook it again, since the large pumpkin was cut, cleaned and packed in bags in the freezer.

The taste of pumpkin caviar is one to one similar to squash caviar, and hardly any guest would call it pumpkin if this dish did not give out a bright orange color. Caviar is perfect as an appetizer for any side dish, and you yourself will not notice how you sweep it off plates or bowls.

To cook pumpkin caviar for 4 people, you will need about 300-400 g of pumpkin.

Peel the onions and wash them in water. Cut into quarters and then into large slices.

Also peel the carrots and rinse the root vegetable in water. Cut into cubes. Since carrots have a denser texture, their slices should be smaller than the others so that everything can cook in the same amount of time.

Rinse the pumpkin last, peel it, seeds and rinse in water. Cut into large cubes.

Pour vegetable oil into a saucepan and heat to high. Stir in the vegetables and stir. Simmer over medium heat for about 15 minutes, stirring occasionally. As soon as the vegetables are fried and soft, pour in 100 ml of hot water, vinegar, reduce heat to low and simmer them for another 10-12 minutes until completely softened.

You already want to eat stewed vegetables - they look so delicious!

Pour salt and black pepper into them. Press the peeled and washed garlic clove.

Mix everything again and let it brew for about 1 minute.

Pour the contents of the saucepan into a deep container and purée with a blender until smooth.

Your pumpkin caviar is completely ready.

It tastes good both hot and chilled. Cover slices of bread with pumpkin caviar and taste for health!
