Eggplant and egg sandwiches are very satisfying and can easily replace any meal. In general, eggplants are used for them in the form of caviar, baking them in the microwave in advance and slightly cooling them. Optionally, you can add peeled boiled eggs directly to the caviar, chopping everything together, or sprinkle the chopped eggs on the tops of the sandwiches. You can also simply cut the boiled chicken eggs into slices and lay on top - any option will turn out delicious.
Ideally, sprinkle such a dish with chopped green onions, but if they are not available, then any greens will do.
Boil chicken eggs in advance and cool them in cold water, peel off the shell and rinse.
