I'd like to tell the guests and guests of the site about this very tasty and unusual sauce of African cuisine (sauce épinard au poisson fumé). I first tasted peanut butter sauces about 15 years ago when I first came to this amazing continent. It was this sauce with pat da rashid (peanut butter) that I especially liked. To do this, grind the fried peanuts with vegetable oil in a blender - we get peanut butter.
If we grind fried sesame seeds with vegetable oil, we get sesame paste. The thickness of both pastes depends on the amount of peanuts and sesame seeds. I poured roasted peanuts and roasted sesame seeds together. I added oil and turned on the blender at full power. After 3 minutes I had the pasta ready for dressing.
Pour in 1 spoonful of vegetable oil and lightly fry them in a pan. Put the onion and garlic in the pan. Then we move them to the side and put the fish and squid, cut into strips, next to it.
Squid will begin to secrete, simmer fish and squid for 3-4 minutes in the released juice. Then add the spinach. Simmer with spinach for another 2-3 minutes. In African cuisine, soda (1/5 tsp) is added to this sauce, which softens all vegetables and gives some special taste. After adding baking soda, onions on your teeth you will no longer feel. Whether or not to add soda is up to you.
The last step is to add dried paprika and sesame and peanut butter. Let the sauce simmer for 1-2 minutes and serve!
