Sour cream sauce with radish and green onions is incredibly tasty and juicy, it has exactly the freshness that you want to feel in such dishes. It can be served with baked or boiled fish - it perfectly emphasizes both its aroma and its taste. Baked meat or chicken is insanely delicious with such a sauce - I recommend creating it before going on a picnic or for serving with grilled chicken, kupat or sausages fried on the grill, with a fragrant pink steak or duck breast. In general, the sauce is good everywhere and even as a separate dish with a bite with black or rye bread.
It's important to choose a juicy and non-bitter radish, so be sure to try it after rinsing and peeling. You don't need to add any more parsley or dill to the sauce, only salt and ground black pepper. If you like richer flavors, you can pour in a little extra virgin olive oil and beat thoroughly to prevent the sauce from stratifying.

Rinse the radishes thoroughly in water, cut the tails from the vegetables and cut into quarters. It is not necessary to grind strongly, since the whole mass will be pureed with a blender.
Rinse the green onions and chop them, add to the container.
Transfer both slices to a deep glass and add salt to taste.
Put sour cream of any fat content and lightly pepper.
Purée everything with a hand blender for about 1-2 minutes, being careful to chop all the cuts. Don't worry, green onions and radishes contain enough liquid in their composition, so that the sauce will not turn out thick, but on the contrary, even liquid. Taste it and tweak it as needed.
Pour into a gravy boat and serve. It is not necessary to create it in advance so that the sauce does not delaminate.
