Kharcho soup is very tasty, not like the usual everyday soups in our cuisine.
Ingredients
Beef - 500 g
Rice - 100 g
Nuts - 100 g
Tkemali sauce - 3 tablespoons
Onions - 1 pc.
Sweet pepper - 1 pc.
Ground red pepper - 1/2 tsp
Hops-suneli - 1 tbsp
Garlic - 4 cloves
Salt to taste
Tomato paste - 60 g
Cilantro - 3-5 branches
Bay leaf - 2-3 pcs.

Kharcho soup is a spicy, rich and spicy soup of Georgian cuisine, which is prepared exclusively from beef. Typical of this soup is the sour tkemali sauce, prepared on the basis of plums. And another important component is walnuts, which must be crushed into small crumbs. Plus, the presence of garlic, bright spices and, of course, cilantro is very important.
For the preparation of the classic soup Kharcho from beef with rice, it is better to use beef on the bone. The broth will be richer and tastier. Put the washed beef in a saucepan and pour water to the top. Send on fire.
After boiling, reduce heat to a minimum, remove the resulting foam and continue to cook at a low boil for 1-2 hours.
While the meat with broth is being prepared, you need to start preparing the vegetable dressing. To do this, peel and finely chop the onion.
Fry it in a pan until golden brown. Ideally, do this with beef fat, but because of its lack, you can use vegetable fat. Then add tomato paste and stir.
Grind peeled walnuts in a coffee grinder and combine with garlic crushed in a mortar. And add the garlic and nut mixture to the pan. Stir and remove from heat.
Remove the cooked meat from the pan. Strain the broth through a fine sieve. Cut the cooled meat into small portions and return to the broth. Bring to a boil over medium heat and add rice. Wash the pepper, remove the stalk and the box with seeds. Cut into small cubes and pour into a saucepan.
After 10 minutes, put the tkemali sauce, vegetable dressing with nuts, ground red pepper, suneli hops, salt and finely chopped cilantro into the soup. Boil for another 5 minutes and remove from heat.
Let the soup steep for at least 10 minutes before serving.
