Dressed with melted cheese, this delicious and nutritious soup may be the only lunchtime meal that will keep you satisfied for a long time. It is easy to prepare and does not require large financial costs.
To prepare the soup, you need to take chicken broth, chicken fillet, long-grain rice, leeks, soft processed cheese (I have "Creamy"), butter, fresh parsley, ground black pepper and salt.
Remove the skin from the breast, and cut the fillet into pieces, add cold water and boil until soft (about 25 minutes).
Cut the fillet into small pieces.
Rinse the rice in several waters until the water becomes completely clear.
Cut the white part of the leek in half lengthwise, and then chop each half across into thin half rings.
Heat butter in a frying pan and put prepared onions and fillets on it.
Fry everything together until lightly browned.
Tie the parsley sprigs into a bunch with a thread.
Bring the broth to a boil and dip the rice and a bunch of parsley into it. Cook at low boil for 10 minutes.
Add chicken breast fried with onions, pepper and salt.
Cook the soup for another 5 minutes over low heat.
Remove the bunch of parsley from the soup and add the melted cheese.
Stir the soup thoroughly until the cheese is completely melted and immediately remove from heat. Never boil soups with melted cheese!
When serving, you can sprinkle the soup with chopped dill.
