Georgian soup kharcho is usually made from beef with rice, walnuts and dried plums - tkemali. I adapted the recipe and propose today to cook pork kharcho soup - thick, aromatic, moderately spicy and very tasty.
To make kharcho soup with pork, we need water, cilantro or parsley, pork pulp, rice, salt, tomato paste, garlic, hop-suneli seasoning, bay leaf, tomatoes, vegetable oil and onions.
Cut the pork pulp into pieces, fill with water, bring to a boil and remove the foam. Boil over low heat until the meat is cooked. Finely chop the onion and simmer in butter, then add the onion to the broth. We wash the rice well, add it to the broth and cook for 5 minutes.
Scald the tomatoes and remove the skin, then finely chop.
Add tomatoes and tomato paste to the soup. Cook for 15 minutes over low heat.
Chop the garlic, finely chop the greens.
Add bay leaf, garlic, herbs and hop-suneli to the soup 5 minutes before cooking. Salt to taste.
