Cooking traditional Uzbek soup with lamb. Delicious and rich shurpa made from lamb, potatoes, chickpeas and vegetables.
Ingredients
Lamb meat - 500 g (preferably with bones);
Potatoes - 4 pieces
Carrots - 2 pieces
Bulgarian pepper - 2 pieces
Hot chili pepper - 2-3 pcs
Bulb onions - 1-2 pieces
Chickpeas - 300 g (already soaked)
Garlic - 3 cloves
Zira - 1 tsp
Coriander - 0.5 tsp
Ground red pepper - to taste
Tomato - 2 pieces

Shurpa is a well-known dish of Uzbek cuisine; not a single feast and even a wedding can do without it. It can be fried and boiled. I want to introduce you to a more dietary, boiled shurpa, which is widespread in Uzbekistan. Lamb is usually used for shurpa - this is a classic, but you can also cook it with beef. There simply cannot be other options, this is a Muslim dish)). A distinctive feature of shurpa from other soups is the broth rich with long languishing, large cutting of vegetables and, of course, the use of Uzbek spices. Chickpeas are often added to shurpa, but you can cook without it. Such a soup will raise even the dead, heal the sick, nourish the hungry.
We need the following products:
Wash the meat and cover with cold water, put on fire and cook for 15 minutes.
Then add soaked and swollen chickpeas, whole chili peas and cook with the meat for over an hour.
Then add onion cut into thin half rings, salt well. Cook for another hour, until the meat becomes boiled and tender.
Cut the carrots into large rings, add to the soup half an hour before cooking, along with the potatoes.
Cut the potatoes into halves or quarters if they are large.
Cut the bell pepper into large pieces. We add it 20 minutes before cooking.
Cook for another 20 minutes.
Cut the tomatoes into small cubes, peel and crush the garlic.
Add tomatoes and garlic five minutes until tender. Pour in cumin and other spices. Chop the greens and put some of it in the soup, add the rest to the plates when serving.
Pour the prepared shurpa into cash registers, put the meat, sprinkle with fresh herbs. Serve with fresh tortillas.
