Rice soup with meatballs is very aromatic. This soup is suitable for baby food, especially if it is not cooked in broth, but in water, and minced meat for meatballs is made from lean meat (chicken or beef, but it will be very good with pork). Rice for soup can be used of any kind, from wild to round-grain type Krasnodar. I generally like this kind of soup with basmati rice, but this time I used regular parboiled rice. Otherwise, everything is as usual:)
Let's get started! Prepare water, potatoes, onions, carrots, ground beef, rice, vegetable oil, salt, bay leaves, dried or fresh herbs, and a pinch of ground pepper.
Boil potatoes (small cubes) in water almost until tender, salt the water and dip the washed rice into a saucepan.
Cook the soup until the potatoes are tender and the rice is half cooked.
Make small meatballs from ground beef with salt and a pinch of ground pepper and dip them into the soup.
Bring the soup to a boil - the meatballs will float to the surface. Continue to cook it for another 5 minutes over low heat under the lid.
While the meatballs are boiling in the soup, sauté the onions (diced) and carrots (fine grater) in vegetable oil and transfer the frying to the soup.
Cook the soup for another 5 minutes, add dried parsley (or fresh herbs), half a bay leaf and turn off the stove.
After 5-10 minutes, when the soup is sufficiently infused, it can be served:)
