A simple non-classical recipe for making shurpa with beef and potatoes, adapted to Russian cuisine.

Ingredients

Beef pulp - 1 kg

Potatoes - 600 g

Bulb onions - 1 pc.

Carrots - 1 pc.

Tomato paste - 3 tbsp l.

Sweet pepper - 1 pc.

Bay leaf - 2 pcs.

Zira - 1 tsp.

Allspice peas - 3 pcs.

Ground black pepper - to taste

Vegetable oil - 2 tbsp. l.

Salt - 1.5 tsp.

Step by step recipe with photo

Shurpa is a traditional oriental dish, which is a thick soup with a little broth. It is prepared according to the classic recipe from lamb, and it is preferable from ribs. I would like to suggest that you cook shurpa according to a beef recipe adapted to our conditions. I am sure you will like this dish and you will cook it more than once.

Wash the beef pulp and cut into large pieces.

Peel the potatoes, cut into large cubes.

Cut the onion into quarters, the carrots and bell peppers into medium-sized slices.

Heat vegetable or olive oil in a frying pan and fry the carrots, onions and peppers for 5 minutes.

Add meat to the pan, fry, stirring for about 5-7 minutes.

Add 3 tablespoons of tomato paste to vegetables and meat, mix and fry for another 5 minutes over medium heat. Stir the ingredients 2-3 times during frying.

Put the fried meat with vegetables in a saucepan, cover with water or meat broth, 4-5 centimeters higher than the thick. Put it on fire and bring it all to a boil.

When the contents of the pan boil, add potatoes, salt, black pepper, allspice peas, bay leaf and cumin. Reduce heat, cover halfway and simmer for 40-60 minutes.

Pour the prepared shurpa with beef into plates and serve with black bread.
