Pea soup with smoked meat is a classic of the genre. An aromatic and rich first course that the whole family will surely enjoy. Before boiling it, it is recommended to soak the peas for 3-4 hours, and preferably overnight. In the cooking process, you can use a variety of Italian herbs, peppers and dill. But the most important attribute of this soup is smoked meats, which give the dish an indescribable taste, aroma and zest.
Prepare the main ingredients for a pea soup with smoked pork ribs and vegetables. Soak the peas beforehand. We also need leeks, fresh carrots, potatoes, smoked meats and seasonings to taste.
Bring the water in a saucepan to a boil and add the peas, cook until tender. Personally, I like the peas in the soup in a very boiled state, but you can focus on your own preferences.
Separate the smoked meat from the bones and add to the pot with the peas, I used smoked pork ribs.
After about 30 minutes, after we threw in the peas, the next ingredient can be added. So, cut the potatoes into large cubes and put them in a saucepan.
Then cut the carrots into random pieces, as well as the leeks, into rings and lightly fry the vegetables in vegetable oil. We add these vegetables to the soup pot about 5-10 minutes after the potatoes.
You can cook the pea soup with smoked meats either until cooked or to the desired degree of boiling of the peas.
Remove the bones from the soup before serving!
