According to the classic recipe, Kharcho soup is prepared with beef broth and in translation from Georgian is called: beef soup. In addition to meat, it must include walnuts and sour plum Tkemali sauce (it is available in stores), which can also be replaced with tomato paste. It tastes sour, but at the same time very pleasant.
Wash 400-500 grams of beef tenderloin and cut into small cubes.
Pour 4 liters of water into a large saucepan and put on fire. Put meat in it and cook for about 1 hour. In the meantime, you can start preparing the main ingredients for the soup.
Finely chop the onion and fry in a pan until golden brown.
Mash the nuts very lightly in a mortar.
Rinse 100 grams of rice with cool water.
Prepare Tkemali sauce, if you don't have it, it's okay. It can be replaced with 4 tablespoons of tomato paste.
Finely chop the herbs and garlic. By the way, there is a great way to chop garlic: press the clove with the side of the knife by pressing on it with your hand, and then chop finely - in this recipe it works with a bang.
So, the beef is boiled - it's time to refuel the soup. First of all, put rice in boiling broth and cook for about 5 minutes. Then add alternately onions, walnuts, onions, tkemali sauce, mix and hold for another 5 minutes. Then add salt and adjika.
The final stage in the preparation of the classic kharcho soup will be herbs and garlic. Then mix the contents of the pan, turn off the heat, cover and leave for 10 minutes to infuse the soup.
