Since childhood, I did not like barley. I didn't like it until I made this soup. All the ingredients go well with each other. Moderately rich, moderately spicy. We liked it very much.
We prepare the necessary ingredients.
Sort the pearl barley the day before, rinse and soak overnight.
The original recipe uses harissa to dress the soup, but if you don't have one, crush chopped garlic and chili in a mortar.
Chop the onion and grate the carrots. Heat olive oil in a saucepan and fry the onions and carrots in it until golden brown.
Chop the meat and add to the onion and carrot. Fry lightly.
Then add the pearl barley and broth. Cook until grains are soft.
Meanwhile, chop the tomato.
Add it to the prepared soup and squeeze the juice of half a lemon. Cook on low heat for another 5 minutes.
Serve hot, garnished with herbs.
