When I get homemade chicken, I make sure to cook borsch with beans. Such borscht for lunch is a real delight: hearty and very tasty! For this borscht, I bake beets in the oven in advance, but you can also cook them. Thanks to such actions, borscht is obtained with a very beautiful raspberry hue. It is better to pour the beans with cold water in the evening, then it will cook faster.
To prepare borscht with chicken and beans, prepare the necessary products from the list.
Pour the beans with water for several hours.
Peel carrots and onions. Cut onion into cubes, carrots into strips.
Peel and grate the beets.
Rinse the beans, add cold water and bring to a boil. Rinse chicken pieces and place in a saucepan. Cook for 1 hour. Remove foam as necessary.
In the meantime, prepare the frying. Heat vegetable oil in a frying pan, put onions and carrots and simmer a little. Add beets.
Then add the tomato (as an option, you can take the diluted tomato paste), peppercorns and bay leaf. Cook for about 15 minutes. You can add a little sugar to the frying. You can also add a clove of garlic to enhance the flavor.
Chop the cabbage thinly, dice the potatoes.
If the chicken is easily pierced with a fork, you can add cabbage to the borscht. Then potatoes.
Cook everything together until the potatoes are done.
Then add the frying, salt the borscht to taste. Turn off the heat, cover the pan with a lid and let the borscht brew for 30 minutes.
After that, pour the borsch with chicken and beans into plates, serve with herbs and sour cream.
