Lamb sorpa is a great solution for the dinner table. This dish will warm both the soul and the body.
Ingredients
Lamb - 500 g
Potatoes - 5-7 pcs.
Onions - 2 pcs.
Carrots - 1 pc.
Tomatoes - 2 pcs.
Greens - 2-3 branches
Water - 1 l
Salt to taste
Spices (black pepper, cumin, coriander, garlic) - to taste

Shurpa, or, as it is also called, sorpa, shorpo, chorpa, is a tasty and rich oriental dish, which is a thick and hearty soup made from lamb, coarsely chopped vegetables, aromatic spices and herbs.
Shurpa is prepared in many countries: Tajikistan, Kyrgyzstan, Turkmenistan, Kazakhstan, Dagestan, Uzbekistan. And therefore, there is no single exact recipe. Every country and every family has its own favorite recipe, which is slightly different in the presence or absence of one of the ingredients. Some are fried before placing food in a cauldron, others are put raw, and others are replaced with beef. And each shurpa turns out to be amazingly tasty, and this is the main thing.
To prepare mutton sorpa, prepare all the necessary products according to the list.
Cut the pulp into medium-sized pieces.
Fry in lamb fat until golden brown.
Peel and cut the onion into half rings.
Cut the peeled carrots into thin half rings.
Wash the tomatoes and cut into half rings.
Cut the peeled potatoes into two parts, and if the potatoes are small, you do not need to cut them.
Put all the ingredients in a cauldron or a thick-walled pan, alternating layers. Lay the meat in the first layer. It must be salted and seasoned with spices. Place the onions and carrots.
Top - tomatoes and potatoes and season with salt and spices again.
Pour in water and put the cauldron on the fire.
After boiling, reduce heat to low and continue cooking for 1 hour. Add chopped herbs 5 minutes before the end of cooking.
Pour aromatic, tasty and nourishing lamb sorpa into plates and serve.
