A gorgeous recipe for daily soup from sauerkraut with pork. A delicious and satisfying first course for every day.
Pork pulp - 800 g
Pork bones - up to 1 kg
Water - 4 l
Sauerkraut - 500 g
Root celery - 100-150 g
Potatoes (optional) - 4 pcs.
Bulb onions - 1 pc.
Tomato sauce - 3-4 tbsp l.
Vegetable oil - for frying
Bay leaf - 2 pcs.
Flour (in some versions) - for thickening
Salt, pepper - to taste
Dill, garlic - to taste

What can you say about the daily soup from sauerkraut?

In the Soviet public catering for daily cabbage soup there was a technological map №875, and the broth was prepared for them according to technological map №151.
And from myself I will say that this is soooo delicious soup, that it is impossible not to include it in the family menu! Homemade, close to the classic, options differ in that the cabbage soup is not thickened with browned flour, but simply with potatoes, which are placed at the beginning of cooking and then boiled very much. In addition to fresh pork meat (pulp from different places, head or shank), smoked-boiled and smoked are also used.
Prepare the ingredients:
First, cook a good, rich bone broth with bay leaf and pepper to taste, as well as celery root and potatoes if you don't plan on thickening with flour.
The broth will need to be boiled for about 1-1.5 hours, fill the bones with water, bring to a boil. After descaling, add laurel and peppers, as well as chopped root celery and potatoes.
In parallel with cooking the broth, more precisely in the second half of the broth cooking time, you can do meat, etc. If the pork is with fat, then vegetable oil is not needed, and if the parquet is without fat, then fry the pieces in vegetable oil for 5-10 minutes to "seal" them.
Add chopped onions.
Lightly salt and simmer everything together for another five minutes.
Sauerkraut usually comes with carrots, so I did not include carrots in the list of ingredients. Simmer the cabbage with the meat for 15 minutes.
Add tomato sauce or tomato paste and simmer for another 15 minutes, if your own juice is not enough, add a little broth.
Remove the bones from the broth and combine it with the cabbage mass, cook over medium heat for 10 minutes, at the end add garlic and dill to taste and if desired. Let the cabbage soup cool and then keep it in a cool place.
The next day, the daily soup from sauerkraut is finally ready.
Reheat and serve.
Traditionally, daily cabbage soup is served with sour cream and some eaters insist on this very much.
But there are people, for example, me, who prefer no sour cream.
