If you want a light and hearty soup with a pleasant sourness, prepare pickle, but not with pearl barley, but with bulgur. Bulgur - wheat grits, does not give mucus, like barley, does not require a long preparation and tastes good.
Ingredients for the soup in the photo:
Rinse the chicken leg and cover with cold water. I buy local chicken meat, not frozen. Skim off the foam, season with salt and cook for 10 minutes.
Cut the potatoes into small cubes to cook faster and add to the broth.
Chop the cucumber finely and send it there. Cook until the potatoes and cucumber are tender.
Wash the bulgur several times and add to the soup. It is brewed in time for 20 minutes.
Prepare the onions and carrots. Chop everything into strips.
Fry in vegetable oil. You can use quite a bit of oil, but the color of your pickle will immediately sparkle, gilded and cheer you up.
Once the vegetables in the broth are tender, dip the broth into the soup. Let it simmer for 5 minutes and turn off the heat. Season with salt, add your favorite spices.
Chop the herbs, put a spoonful of sour cream in a plate and serve the pickle.
