Kespe is a Kazakh dish, translated from Kazakh as broth. This soup comes from a distant nomadic life, it is good for strength and very nutritious. And there is also one feature: they prepare the noodles for the soup themselves.

The soup broth is cooked with horse meat, beef or camel meat. The broth should be rich, the meat should be fatty and always on the bone, or add the seeds separately. You can also add potatoes to the kesp, this is at your discretion. Let's start making soup.

To prepare Kazakh noodles Kespe, we need the products on the list.

Wash the beef and bones thoroughly and send them to boil in cold water. When the water boils, remove the foam with a slotted spoon. We make the fire small and cook until the meat is tender. It will take 2-2.5 hours, depending on the quality of the meat.

While the meat is cooking, let's start cooking the noodles. Knead a hard dough from flour, eggs and a pinch of salt. Cover it with a bowl or wrap it in plastic wrap and let it rest for 30 minutes. During this time, the dough will become soft and easy to work with.

Divide the dough into 3 parts. We cover two so that they do not dry out, and roll the third into a circle.

Cut the dough into strips and let it dry a little, about 10 minutes.
