Oyster mushroom soup does not have such a pronounced mushroom flavor as mushroom soup or, say, porcini mushroom soup. Therefore, oyster mushrooms are often one of the main ingredients, and not the only one. I love oyster mushroom soup in the form I want to show below. And I also like the soup, cooked in the same way, only instead of meat, minced meatballs are prepared. If you like mushroom dishes, try this soup;)
So, prepare potatoes, a piece of pork or other meat, water, oyster mushrooms, noodles, onions, carrots, salt, ground pepper, parsley, turmeric, bay leaf.
Boil a piece of pork until cooked, then cut the meat into small pieces, return to the pan. Salt the broth, and peel and dice the potatoes.
Transfer the potatoes to the broth and cook until soft. While the potatoes are boiling, chop the oyster mushrooms coarsely, peel the onion (you need a whole half of the onion head), and cut the carrots into tiny cubes.
When the potatoes are boiled, add the onion, carrots, mushrooms to the pan. Cook the soup for about 7 minutes, then remove the onion from the soup. Add noodles to the soup and cook for another 3 minutes.
Turn off the fire, and add herbs, ground pepper and turmeric to the oyster mushroom soup, as well as half a bay leaf.
After 5-7 minutes oyster mushroom soup can be served!
