A very fragrant and hearty sauerkraut hodgepodge is a delicious version of soup for weekdays and holidays.
Ingredients
For a 2.5 liter pot:
Sauerkraut - 500 g
Pork ribs - 300 g
Smoked pork ribs - 100 g
Hunting sausages - 2 pcs.
Bulb onions - 1 pc.
Carrots - 1 pc.
Celery - 1 petiole
Tomato sauce - 2-3 tbsp
Vegetable oil - 2 tbsp.
Capers - 5-6 pcs.
Sugar to taste
Salt to taste
Ch.m. pepper - taste
Bay leaf - 1 pc.
Greens - 0.5 bunch
Lemon - for serving

There is an opinion that a hodgepodge in the form of a soup was invented specifically for feasts, it was served with vodka so that you could drink for a long time and not get drunk, that's why it was also called a "hangover". Solyanka was the first and second course at the same time. It is believed that the ancestor of the hodgepodge was pickle, but if you look at it, then there is a similarity in the hodgepodge with cabbage soup. Many sources claim that initially the hodgepodge was fish, and only after a while they began to cook it with several types of meat and mushrooms. This is a very tasty and satisfying dish, beloved by my family. Now I will show you a variant of sauerkraut solyanka.
For sauerkraut hodgepodge, take the foods listed.
The ribs need to be washed under running water, cut. Pour water into a saucepan, cook over low heat for 20 minutes. Remember to collect the foam.
While the ribs are boiling, chop the onions, grate the carrots, chop the celery. Fry in vegetable oil for 5 minutes.
Add sauerkraut, stir vegetables in a pan.
Add tomato sauce or tomato paste, cook over low heat for another 5 minutes.
Chop the smoked ribs, add to the pot, cook for 10 minutes.
After a while, add sauerkraut with vegetables to the pan. Cook for 15 minutes. Pickled cucumbers can also be added if desired.
Then cut the hunting sausages, add to the hodgepodge, cook for 10 minutes. Salt and pepper the solyanka, add bay leaf and sugar to taste.
Next add the capers (olives or olives) and cook for another 5 minutes. If you like spicy, add hot pepper to taste.
Add the greens last, stir, turn off the stove and let the hodgepodge brew for 15 minutes.
Serve the prepared hodgepodge with a lemon wedge.
Sauerkraut solyanka is ready. Enjoy it.
