This sorrel soup with meatballs is not only easy to prepare, delicious and healthy, it is also one of the few to eat on hot summer days. Preparing soup with meatballs and sorrel is very simple and fast enough: if you take into account the cooking time of rice, and rice is cooked, as a rule, 15-17 minutes, then you may need 20-25 minutes to cook the whole soup. Ingredients

For a 2 liter pot:

Minced chicken - 300 g

Round rice - 0.5 cups

Sorrel - 70 g

Green onions - 3 pcs.

Young garlic - 1 pc.

Celery - 2-3 stalks

Carrots - 1 pc.

Dill - 10 g

Salt to taste

Sugar - optional

Ch.m. pepper - taste

Vegetable oil - 1 tsp

Step by step recipe with photo

Prepare foods from the list. Minced chicken for meatballs will do anything, I had chicken thighs. Wash greens, peel carrots, rinse rice several times. Pour 1.5 liters of water into a saucepan, put on gas.

We cut green onions, garlic, celery and carrots as we like best.

In a small amount of vegetable oil, we sauté vegetables for a couple of minutes. When the water in the pan has boiled, add the vegetables.

Add the washed rice immediately. After boiling, cook the soup for 10 minutes.

Salt the minced chicken, pepper to taste, form small meatballs with wet hands - the size of a walnut.

We send the meatballs to the pan and cook everything together for another 5 minutes.

We wash the sorrel thoroughly under running water, remove the stems, they are fibrous. Coarsely cut the sorrel, add to the pan. As soon as the soup boils, remove the foam, salt and pepper to taste, if it seems too sour, add a little sugar. Cook sorrel for exactly one minute.

Lastly add the finely chopped dill, mix the soup, turn off the stove, cover the pan with a lid and let the soup rest for 10 minutes, all the tastes should mix.

We serve delicious, light and healthy sorrel soup with meatballs as the first course. If desired, add a little homemade sour cream, with it the soup will only benefit in taste.
