Sausages (boiled sausage / sausages) - 300 g

Salt to taste

Miner's buckwheat soup can be a lifesaver when preparing a quick lunch. It is cooked in water or broth, with the addition of meat, stew, smoked sausage or boiled sausages without smoked taste. In order to make the miner's buckwheat soup thicker, you can add a little more buckwheat.

Prepare the ingredients: wash and clean the vegetables, rinse the buckwheat and let the water drain completely, free the sausages from the shell.

Finely chop the onion and potatoes, grate the carrots on a coarse grater, chop the sausages not very finely.

In a deep saucepan, heat up two types of oil, put onions and carrots and sauté over medium heat until soft and lightly browned, stirring constantly (about 5 minutes).

In parallel with this process, pour 2 liters of water into a separate pan and put it on fire so that the water boils.

… buckwheat and sausages. Season with coriander and black pepper. Mix everything and pour in boiled water. Bring the soup to a boil, cover and cook over low heat until tender (about 30 minutes).

Add salt about 5 minutes before the soup is ready. The amount of salt depends on the salinity of the sausages. We also add finely chopped greens. We cook the soup, turn off the heat and leave, without removing the lid, to infuse for 10-15 minutes.

Now the miner's soup with buckwheat can be poured into portioned plates and served, additionally sprinkled with fresh herbs.
