I fell in love with this soup from the first spoon, it is so delicious! And it's easy to prepare!
Chicken - 600 g
Lemon - 1 pc.
Orzo pasta or rice - 150 g

Portuguese Chicken Soup with Lemon and Mint is a soup that must be cooked at least once! My husband is a big dislike of soups, but he also eats this soup with pleasure, no matter how often I cook it. And I cannot say that its preparation requires some special ingredients - everything is simple, affordable and VERY tasty!
We will prepare all the products according to the list. You can take any chicken meat except chicken breast, we need rich chicken broth for this soup, and breast is not suitable for this.
Put chicken meat cut into portions in a saucepan, I have wings and thighs.
Add sprigs of mint and parsley. Leave a couple of mint sprigs for serving the soup.
Chop the celery stalk and add to the saucepan.
Add the chili flakes.
Peel the onion and cut into four parts. Add to the pan.
BUT, I met a version of this soup, in which the onions were pre-chopped and fried until transparent in olive oil. I indicated the amount of olive oil in the recipe if you want to add fried onions to the soup.
Remove the zest from the lemon and add it to the pan.
Pour about 1.5 liters of water into a saucepan, add 1 tsp. salt and put the pan on the fire. First, cook over high heat and remove the resulting foam. Then reduce the heat to medium and cook the broth until the chicken is cooked through.
Take out the chicken meat from the pan, and strain the broth.
We will disassemble the cooled chicken meat into small pieces.
Put the pot with chicken broth on the fire. As soon as the broth boils, pour the orzo pasta into it.
Cook the soup for another 10-12 minutes, until the pasta is fully cooked. After that, add lemon juice to the soup. Add juice in portions and taste the soup. Add salt if needed. Grind and add a few mint leaves to a saucepan. Remove the soup from the heat.
Portuguese chicken soup with lemon and mint is ready! To serve, put some chicken meat in a bowl and fill it with chicken broth with orzo pasta, lemon and mint.
