Recipe for rich pea soup with smoked brisket.
Smoked brisket on ribs - 200 g
Water - 1 l
Dry peas - 0.5 tbsp.
Potatoes - 2 pcs.
Onions - 0.5 pcs.
Carrots - 0.25 pcs.
Sunflower oil - 2 tablespoons
Bay leaf - 2 pcs.

Today we are going to cook classic pea soup. The classics of the genre are smoked brisket or smoked pork ribs, for me it combined in one piece of brisket on the ribs. The brisket was not particularly fatty, more meat.
I like to almost puree the peas in the soup, some people use the addition of soda for this. But I prefer not to add it. I just soak the peas in advance (this is also a classic of the genre). Soaking will come in handy in the future - by washing the soaked peas, we get rid of the components that cause intestinal seething later. It is not for nothing that pea soup has received the popular name "musical".
I also take potatoes of boiled varieties - the soup with it turns out to be soft, tender.
So, we begin to prepare the pea soup with smoked meat according to the classic recipe. Take the groceries on the list.
Soak the peas for 2-3 hours in advance. It is possible at night if you are going to cook the soup on the second day.
Rinse swollen peas under a cold tap.
Place the smoked ribs, the skins removed from the whole brisket, and the washed peas in a saucepan.
Cover with water and bring to a boil. Remove the foam, add a piece of onion, carrots, stems of herbs, cook for 15 minutes at a slow boil.
Peel and coarsely chop the potatoes.
Add it to your soup. Cook until soft.
For the dressing, peel and finely chop the onion and carrot.
Lightly fry the vegetables in sunflower oil.
Add finely chopped smoked brisket. Continue the process. Do not fry too much, leave the soup with a mild flavor.
When the potatoes are boiled and the peas are practically mashed, remove the roots and pork skin. Season the soup to taste.
Add the dressing to the soup.
Season with broken lavrushka leaves. Bring the soup to a boil and turn off the stove, hold it under the lid for a little so that the pea soup is slightly infused.
Serve the classic pea soup with smoked meats on the table, seasoning with herbs.
