You can cook it from any part of the chicken or from a whole carcass, having a spacious saucepan or cauldron at hand. The main thing to remember is that it is best to soak the meat for about 1-2 hours before cooking, otherwise you can get an opaque and cloudy broth. This is done in order to extract blood from meat - it is the blood that curdles in boiling water and forms a cloudy and dirty foam on the surface of the liquid in the pan. If you do not have free time for soaking, the ready-made broth can be passed through 2-3 layers of gauze and clarified by warming up in a saucepan along with the whipped protein, and then strain again through cheesecloth.

To make the dish tasty and aromatic, pour the chicken meat or parts of the chicken with cold water. When heated, the meat will give it its aroma, but the boiling water will immediately seal the meat, and the juice will remain inside it.

So, let's prepare the necessary ingredients and start cooking!

We wash the chicken parts, cut off the veins and films from them, cut if necessary and put in a saucepan.

Fill with cold water and place on the stove, turning on medium heat. After about 5 minutes, remove the formed foam with a slotted spoon, mix everything carefully and remove the foam again.

Also, we will not add fresh herbs to the broth - it will give it a greenish tint. Protom everything on the stove until the chicken meat is fully cooked - the broth will become less, but it will be more saturated. 2 minutes before cooking, lay out a couple of dried or fresh thyme sprigs to enhance the aroma. It can be substituted with rosemary or celery.

If the broth is cloudy, strain it through a fine mesh strainer. Chicken meat can be extracted and a delicious soup with vegetables or noodles, preferably homemade, can be cooked in chicken broth!
