I hasten to share with you a recipe for delicious, rich and hearty cabbage soup with meatballs. I cook this soup at any time of the year, but for some reason in winter it is especially good - I don’t know what it’s connected with, but not only I notice, but my family members also note this fact. Once I tried to cook it from purchased sauerkraut - I didn’t like it, maybe it’s not fermented, but simply pickled to speed up the process, it’s hard to say, nevertheless, your own sauerkraut is much tastier and the cabbage soup will turn out with natural sourness. In this recipe, I use chicken meat, but this is not essential, you can use pork or beef.
Ideally, prepare the broth on the bone in advance, then the sauerkraut cabbage soup with meatballs will be even more rich.
So, let's prepare all the necessary products and start cooking cabbage soup.
Place the sauerkraut in a saucepan.
Add the soaked barley.
Advice! Before cooking the barley, soak it in cold water for at least 2-3 hours, then it will boil down faster. I soak overnight.
Pour in hot water or broth, cover and cook over medium heat for 40 minutes.
Advice! If you like the cabbage to crunch, then boil one barley and add the cabbage 20 minutes before cooking.
During this time, spin the meat through a meat grinder with a medium grinder attachment.
Form the minced meat into the desired size.
By the way, I don't add anything to the minced meat, the meatballs in the soup are soaked in all the necessary flavors.
Dip the meatballs into the boiling broth and cook for 15 minutes, skimming off in the process.
In a frying pan with vegetable oil, fry the chopped onions and grated carrots until soft.
Add chopped tomato, pepper, frozen spinach and sauté, stirring occasionally, for 5-7 minutes.
Send the vegetable frying to the cabbage soup.
Add versatile seasoning, pepper.
For flavor, add greens, boil for 10 minutes over moderate heat.
Cabbage soup with meatballs are ready, they should be served hot with sour cream and fresh herbs.
Advice! Ideally, cook cabbage soup in the evening, the next day they will infuse and become even tastier.
