Ingredients

For a 3 liter pot:

Homemade chicken - half

Bran kvass - 500 g

Bulb onions - 1 pc.

Carrots - 1 pc.

Parsley root - 1 pc.

Hot pepper - to taste

Celery petiole - 1 petiole

Salt to taste

Ch.m. pepper - taste

Parsley - a couple of twigs

Flour - 1 glass

Chicken egg - 1 pc.

Zama soup in translation is broth or yushka, the same cult thing among Moldovans as borscht among Ukrainians or okroshka among Russians. It is prepared in every family. Each Moldovan housewife has her own little secret of making this soup, but the basis is always the same - homemade chicken, homemade noodles, homemade bran kvass.

This soup is often prepared and served as a medicine)) after weddings and long feasts, the next morning - a wonderful hangover cure. Someone adds dried thyme to it, someone - lovage (leushtyan), but since it is quite difficult to find this herb and many have a bad reaction to it (intolerance), we will replace it with stalked celery. It tastes somewhat like lovage, but softer and less aromatic.

In summer, the Moldovan deputy is sometimes cooked with the addition of tomatoes, but there is absolutely no need to put potatoes in the deputy, even for the sake of satiety and richness.

Let's get started. Wash the chicken thoroughly under running water, peel the vegetables, wash the herbs. I have purchased kvass, but of very decent quality, without fermentation.

Cut the chicken into small pieces, add water and place on the stove. When the water boils, drain the first water, rinse the chicken, fill it with clean water. After boiling again, the foam will no longer stand out and the broth will be clean. It takes 1.5-2 hours to cook the chicken, the meat should be separated from the bones. Salt, taste the meat.

While the chicken is cooking, let's make the noodles. Mix the egg with flour. Add flour gradually. I have a selected chicken egg, it took a little less than a glass of flour. Knead a soft dough, cover with cling film and let it rest for 20 minutes.

After a while, roll out the dough thinly, sprinkle with the remaining flour, cut it into noodles and leave for a while to dry the noodles a little.

At this time, chop the onions, carrots and parsley root, ideally in a wedge, but for now you can chop the way you like best. Add to chicken, cook until tender.

Cut the petioled celery, add to the soup, cook for 5 minutes. Then add the noodles.

Homemade noodles cook very quickly. After a minute or two, add kvass.

When the soup comes to a boil and the noodles float up, taste it - maybe you need to add salt. Add parsley, hot pepper, pepper, turn off the stove, cover and let the soup steep for 10 minutes.

Moldavian soup Zama is ready. It is customary to serve the deputy with chopped fresh herbs and sour cream.
