In the composition of beetroot growers there is almost the same borscht set (potatoes, beets, onions, carrots), cabbage and garlic are excluded. But the taste is noticeably different with a wine, refreshing note due to vinegar or lemon juice.
The most satisfying, rich version of beetroot is in meat or chicken broth. I must say that it is delicious both hot and cold.
For the classic hot beetroot chicken with chicken, take the food listed.
We bake the beets in the oven for 30-60 minutes at a temperature of 180-200 degrees, to speed up a large root crop we cut and wrap in foil.
Meanwhile, we cook chicken broth - we put part of the carcass in boiling water along with bay leaves and root celery, cook for 30-40 minutes.
Add the potatoes, cut into cubes or sticks.
Fry chopped onions in vegetable oil until transparent, then add carrot shavings, sauté for 3-4 minutes.
Add the grated beets, squeeze out the lemon juice (or pour in the vinegar). Stir, simmer together for a couple of minutes.
We shift the beetroot dressing into chicken broth with already soft potatoes (celery can be caught and thrown away), boil, season with salt and hot pepper, boil for 1-2 minutes and remove from heat.
The classic hot chicken beetroot soup is ready - served with fresh herbs.
