When it's hot outside, my okroshka season begins. At our house, okroshka is prepared almost all summer. Sometimes I dilute it with other cold soups, but still it remains our favorite. I can eat okroshka 3-4 times a day, and I don't get bored with it.
There are so many options for okroshka! Each housewife strives to add something of her own to okroshka, claiming exclusivity. Today I suggest you cook okroshka on kefir with mustard. I began to add mustard to okroshka, probably a couple of years ago, and I really liked it, and then I read that many people also do this. Which mustard to choose is a matter of taste: I decided to try it with honey. Kefir took 1% so that it was not so high in calories, otherwise the husband would not eat.
To prepare okroshka with mustard, prepare the necessary products from the list. Boil eggs and potatoes in advance.
Dice potatoes and eggs. Place in a deep bowl.
Also chop the sausage and cucumber.
Chop green onions and dill.
Mix all ingredients, add salt and pepper.
Add mustard to a glass of kefir and stir thoroughly until a homogeneous emulsion. If you have spicy mustard, then you may need less of it. It is important to try everything here to achieve the desired taste.
Pour the mixture into okroshka and mix again.
Then pour the remaining kefir into a bowl. Put okroshka in the refrigerator for 30-40 minutes, letting it brew.
