Ingredients
For a 2 liter pot:
Smoked pork ribs - 250 g
Potatoes - 300 g
Carrots - 80 g
Onions - 50 g
Root celery - 150 g
Sun-dried tomatoes - 40 g

Sun-dried (dried) tomatoes today have gained some incredible nationwide fame and love. Personally, I first dried them back in 2011, and since then I have been harvesting them regularly during the season. Today, they are used to prepare salads, baked goods, add to main courses, snacks and even soups. Today we will prepare one such version of a soup with sun-dried tomatoes.
Prepare all the necessary foods from the list. Peel the onions, carrots, potatoes and celery root, wash under running water, dry with paper towels. Cut the smoked ribs by the bone.
Pour a liter of water into a saucepan. When it boils, add the ribs, cook for 15-20 minutes. Next, add the diced potatoes, cook them together with the ribs for 10 minutes.
After a while, cut the onions into small cubes, chop the celery root into thin strips, and grate the carrots on a coarse grater. We transfer all vegetables to a saucepan. Cook for another 10 minutes.
We put the halves of dried tomatoes on a paper towel, you need to remove the excess oil, smoked ribs in the soup will be enough for satiety and broth.
Sun-dried tomatoes can be cut into convenient slices, added to soup. Then add water if necessary, bring to a boil, salt the broth and pepper to taste. By the way, when I roll sun-dried tomatoes in season, I put rosemary, garlic, thyme and bay leaf with them in a jar, so I won't add any seasonings other than salt and pepper to the soup, it will be fragrant anyway. Boil after boiling for no longer than 5 minutes.
At the end, add chopped fresh herbs, turn off the stove, cover the soup and let it brew for 10-15 minutes before serving.
Soup with sun-dried tomatoes is ready. At the same time, the tomatoes will not boil over, retain their sourness and will act as a fragrant seasoning in our first dish.
