For the past two months, I've been constantly making pumpkin puree soup. And although we never get bored with it, I decided to dilute it a little and make a lemon-garlic soup with bulgur. I cooked this soup in a weak chicken broth, you can cook it even in water, then the soup is suitable for a lean menu. The soup is prepared very quickly and easily. Bulgur can be cooked in broth, or separately, then the soup will be more transparent.
To prepare the soup, prepare all the necessary products from the list.
Peel and dice the onion and garlic.
Peel the carrots and cut into strips.
Cook bulgur in a separate saucepan in a 1: 2 ratio. Do not forget to add salt at the end of cooking.
Simmer onions and garlic in vegetable oil, then add carrots and cook for 4-5 minutes, until the onions are transparent.
Bring the chicken broth to a boil, add ready-made bulgur and fry. Season the soup with salt and pepper to taste, add basil or other herbs of your choice. Squeeze the right amount of juice from the lemon into the soup.
Let the soup boil, remove from heat.
Pour lemon garlic soup with bulgur into bowls and you can start eating.
