Water - 1 l
Vegetable oil - 2 tbsp.

Winter is coming to an end, but pumpkin soups are still not showing up for me, we eat them almost all winter. Some of the pumpkins, of course, could not be saved, but this winter we still became the champions in eating pumpkin dishes.
Today I want to show you a variant of pumpkin puree soup with bulgur and meatballs. I used ground beef for the meatballs, but it can be replaced with chicken, turkey or mixed mince - the soup will taste slightly different, but delicious in any version. You can also adjust the thickness of the soup by adding more water or broth. We love this soup, thicker.
So, prepare the products we need from the list.
Place the ground beef in a bowl, add salt, pepper and one chopped onion. Mix the minced meat well and set aside so that all the ingredients make good friends and it is easier to mold the meatballs.
Peel the pumpkin and second onion.
Cut the onion into large cubes. Heat a couple of tablespoons of vegetable oil in a saucepan, add onions, fry a little. Then add the pumpkin cut into large cubes, ground pepper and dry basil. Fry lightly until a light aroma appears.
Pour hot water into a saucepan, add salt to taste.
Bring soup to a boil and add bulgur.
Cook the soup for 20 minutes, stirring occasionally, until the pumpkin is soft.
Roll the meatballs while the soup is cooking.
When the pumpkin is ready, puree the soup with a hand blender.
Dip the meatballs into the soup and cook for 20 minutes over low heat, stirring so that the soup does not burn.
At the end, taste the soup and add salt and pepper if necessary.
Pour the pumpkin soup with bulgur and meatballs into bowls and serve.
