Ukrainian borscht glorified Ukrainian cuisine. Each region has its own option. I would like to add a recipe for real rich borscht.

Cabbage - 350 g
Beets - 2 pcs.
Potatoes - 5 pcs.
Bulb onions - 1 pc.
Chili pepper - 0.5 pcs.
Wine vinegar - 3 tablespoons
Vegetable oil - for frying
Ground black pepper - to taste
Ground coriander - to taste
Greens - 0.5 bunch
Tomato sauce - 0.5 l can
Garlic - 5 cloves
Sugar - 1.5 tbsp (flat)
Sour cream - when serving
Parsley - 1 root
Celery - 1 root
Butter - 1.5 tbsp.

Step by step recipe with photo
In our family, borscht is our favorite first dish. We cook it every other time. There are a lot of borscht options. But the most popular is the borscht of my great-grandmother Praskovya. Today I want to share the recipe with you. This version of borscht is cooked only with pork, and the beets need to be caramelized. Borscht is designed for a four-liter saucepan.
Let's start cooking borsch with caramelized beets …
We will need the products on the list.
Before cooking, I soak the meat for half an hour in cold water to completely drain the blood. We send it to a saucepan and fill it with cold water. Let the water boil, reduce the gas and cook over low heat.
Let's prepare the vegetables. Peel the potatoes, wash them and cut them into cubes.
We also clean the parsley and celery.
We send them to cook in broth for meat.
Cut the onion into cubes, grate the carrots and send them to sauté in vegetable oil.
Cut the cabbage into strips.
Cut the beets into strips (just cut them, not three).
Until now, everything is as usual. Now let's do this. We send a mixture of butter and vegetable oils to the pan.
When the butter has melted, add sugar.
Stir constantly until the sugar turns a slightly beige color.
Then immediately pour the beets and mix quickly.
After about 2-3 minutes, add boiling water, which should not completely cover the beets. It should be stewed, not boiled. Add wine vinegar, you can replace it with lemon juice or regular vinegar. Simmer until tender. At the end of stewing, add tomato sauce, bring to a boil.
When the meat is cooked in the broth, remove it from the broth, and send the potatoes to the broth.
Bring to a simmer. When the potatoes boil for 5 minutes, send cabbage and chili peppers to it.
Finely chop the greens.
And also chop the garlic finely.
When the vegetables in the pan are ready, add the herbs, garlic, browned vegetables, and stewed beets. Salt, pepper and simmer for another 5 minutes. Turn off the heat and leave for 10 minutes.
Borscht is ready! Served to family and friends.
