Everyone in my family just adores okroshka. With whatever I've cooked it, there are so many options that I can't count. And just recently I came across a recipe for okroshka with cottage cheese. Of course, I immediately wanted to try it. To be honest, for some reason this particular version was prepared by the author without adding sausage and meat, but I still risked adding boiled chicken fillet to it. It turned out very tasty. It did not interrupt the taste of the rest of the ingredients and the cottage cheese was felt well in the finished dish, while the okroshka turned out to be satisfying. In general, try to cook this option as well. If you are a lover of this cold dish, then you will definitely be satisfied with it.

Prepare all the necessary products for making okroshka. Pre-cook potatoes and eggs until tender. Whole medium-sized potatoes in their skins are boiled for 20-25 minutes, depending on the variety. Boil eggs for no longer than 10 minutes. Cool everything down. If you put chicken fillet, then boil it separately for about 25 minutes.

First of all, finely chop green onions and dill, add a little sea salt, rub lightly with a spoon, so that the herbs quickly give their aroma to the dish.

Peel the potatoes, cut them into small cubes together with the cucumber, add to a bowl.

At this time of year, radishes are rare, but watermelon radishes with the same vibrant rich color and unmatched taste are sold in any market. Cut the peeled watermelon radish and egg into the same small cube. Cut or grab the chicken fillet by hand.

Then put a thick, not very fatty sour cream, add cottage cheese of your favorite manufacturer or bazaar, pepper to taste.

Dilute okroshka to the desired thickness with carbonated water or chicken broth, taste it. You can add a little acid in the form of lemon juice or white wine vinegar. If everything suits you, then cover the bowl with cling film and send it to the refrigerator for a couple of hours before serving. You can skip this step in winter.

Pour the finished okroshka with cottage cheese into portions and serve.

Delicious! Enjoy it.
