There is a dish in Jewish cuisine called "Kneidlach". These are dumplings made from flour obtained by grinding matzo. Matzah - unleavened cakes made from water and flour without salt. That is, if you grind matzo, you get flour. It is from this flour that Kneidlah is prepared. Since I didn't want to bake matzo myself, I found an excellent alternative to it - thin lavash. The dumplings turned out to be excellent: tender and airy. Exactly what you need for chicken broth. This soup is a dietary dish and is suitable for baby food.
To prepare dumplings, we need: thin pita bread, an egg, chicken broth, salt, ground black pepper and water.
First of all, the pita bread must be dried. Then grind twice through a meat grinder and sift through a sieve.
Cook chicken (turkey) broth in advance. Cooking dumplings. Pour 2/3 cup of lavash flour into a saucepan and pour a glass of water at room temperature.
We mix. Leave for 30-40 minutes so that the flour swells and absorbs water completely.
Then put the raw egg. Salt and pepper to taste. We mix. We get a liquid dough.
We begin to gradually add lavash flour until we get a dough from which you can roll a ball. You should not put a lot of flour, the dumplings will be rubber.
We form small dumplings with wet hands.
We boil water in a saucepan, send dumplings there. In 3-4 minutes they will float up. Cook for another 5 minutes and take it out.
Put the finished dumplings in the broth. Serving for lunch.
