Pickled cucumbers - 2 pcs;

Flour - 1 tbsp. the spoon;

Parsley root - 2 pcs;

Black peppercorns - 5 pcs;

Salt to taste;

Sour cream - 2 tbsp. spoons;

Cucumber pickle - 0.5 cups.

Pickle is a soup, an indispensable ingredient of which is pickled cucumbers. It is cooked in meat and fish broths, as well as in vegetable broths (vegetarian). When cooking, it should be borne in mind that the beef broth is transparent, and the pork broth is cloudy. Pickle with kidneys cooked in broth of pork ribs. You can take both pork and beef kidneys.

To prepare the pickle, you need to take ready-made meat broth, pork or beef kidneys, onions, pickled cucumbers, potatoes, flour, ghee, herbs and parsley root, black peppercorns, salt, cucumber pickle and sour cream.

Peel the pickled cucumbers, cut them lengthwise into 4 parts, remove the seeds, and slice the flesh thinly across. Do not throw away the skins and seeds!

Clean the kidneys from films and excess fat, cut in half, rinse, cover with cold water and soak for 2-3 hours, changing the water periodically.

Wash the kidneys, add boiling water 2-3 times for 1 minute and rinse again.

Pour a small amount of boiling water over the kidneys and boil until soft (about 1–1.5 hours).

Cut the finished buds into thin slices. Strain the broth.

Bring the meat broth to a boil and put in it the skins and cores of pickled cucumbers, pepper and 1 peeled parsley root. Boil the broth for 20 minutes and then strain.

Peel and dice the potatoes.

Pour potatoes with a little boiling water and boil until semi-soft. Never put potatoes directly into meat broth, as the sourness from cucumbers can make it hard!

Pour the prepared slices of pickled cucumbers with a small amount of meat broth and cook for 10 minutes.

Peel the onion, cut it in half, and then chop each half into thin half rings.

Saute the onion in oil.

Peel the remaining parsley root and coarsely grate or cut into strips.

Saute the parsley in butter.

Combine the sautéed parsley root with the onion, add a little broth and simmer for 7-8 minutes.

Pour flour into a dry frying pan and dry without discoloration.

Dilute the flour sauté with cucumber broth and mix so that there are no lumps.

Pour the broth of the kidneys into the broth, put the potatoes together with the liquid and cook for 5-7 minutes.

Add the sautéed onions and parsley root, the stewed cucumbers and the diluted flour sauté. Boil the pickle for 10-15 minutes, pour in the cucumber pickle, salt to taste and bring to a boil. Instead of salt, you can add dry vegetable seasoning to the soup.

When serving, add a portion of the kidneys, sour cream to each plate and sprinkle with chopped parsley.
