In the summer heat, you want not only quick cooking, but also a cooling effect. Okroshka is just such a dish.
Milk serum - 900 ml

Okroshka is a very popular summer dish that has been cooked in Russia for a long time. True, there are many variations of this dish, it all depends on the taste of those who will eat it. Its difference from other first courses is that it is always a cold dish and whey, kefir or other liquid fermented milk products are used as a liquid base, someone generally prepares okroshka in water with the addition of sour cream and lemon juice. I like the option on milk whey, it has a delicate sour taste, it is not thick like kefir, not greasy, but it contains a lot of useful substances, and in addition to everything it is a cheap product!
For the meat component, I also prefer the classic version - to use sausage, but I always try to buy good quality sausage and preferably in accordance with GOST, the doctoral one is great.
So, for cooking okroshka with whey sausage according to the classic recipe, we need products from the above list.
Since, except for potatoes and eggs, all products are used raw, we put the potatoes and eggs to boil. You can put them in one container, fill with water and cook.
Let it boil for 8 minutes, after which we take out the boiled eggs.
Now you can salt the potatoes and leave them to cook until tender.
While the potatoes are boiling, we will wash all the vegetables, after which we will cut them for okroshka. Dice the cooled and peeled chicken eggs. Let's leave one yolk.
Dice the radish. If it is not large, then you can cut it into circles, and then cut them into quarters or just in half.
Cut the sausage into cubes.
Then cut the cucumbers.
Let the boiled potatoes cool and then remove the peel.
We also cut it into cubes.
Now we put all the chopped food in a saucepan.
Chop the washed dill with parsley, as well as the green onion feathers.
Add herbs to the pan, you can add salt and taste.
Mash the deferred yolk with a fork or spoon, dilute it with a small amount of whey, salt it - you get a kind of dressing for a more beautiful saturated color.
Pour this dressing into the future okroshka, add a little mustard, and then mix everything.
Now we fill everything with cold whey.
We mix everything and, if necessary, add some salt to taste. The classic okroshka with whey sausage is ready.
We serve it right away, add sour cream to taste and decorate with a slice of boiled egg. Enjoy your meal!
