Goose meat (any of its parts) - 300 g
Bulb onions - 1 pc.
Carrots - 1 pc.

I have always believed that the most delicious soups are obtained only with chicken broth. It turns out I was wrong. After trying goose soup, I was pleasantly surprised. Delicious, rich, and even so fragrant! It will not be difficult to prepare it, the main thing is that the necessary products are in the house. In this recipe, I used small star-shaped pasta for the soup, but this is not necessary. They can be replaced with any cereals or simply cooked with potatoes. Everything will depend on your taste.
So, let's begin…
For a delicious goose soup, prepare the required ingredients.
Any part of the goose carcass can be used to prepare the broth. Wash the meat well under running water. If you want the soup to turn out less greasy, remove the skin. If you cook with it, make sure there are no leftover feathers on it. Place the meat in a saucepan and cover with clean drinking water. Add bay leaves, black peppercorns, half onion and carrots. Send the saucepan over the fire and bring to a boil.
Then cook the broth over low heat until the meat is cooked, it will take about 40-60 minutes. Then strain the broth using a fine sieve or cheesecloth folded in several layers.
Cut the peeled potatoes into cubes and send to the pan. Cook it for 10-15 minutes until tender. Add salt and black pepper.
Put the pasta in a saucepan, it is desirable that they are small (stars, letters, shells or noodles).
Cut the onions and carrots that remain, cut into cubes and fry in vegetable oil until golden brown. Send to the soup after the pasta. Boil for 5-7 minutes over low heat.
Then add the dill, wait until it boils again, and remove the pan from heat.
A very tasty, rich soup with an amazing aroma is ready. Pour the goose soup into portioned bowls and serve hot.
