Quick-to-prepare vegetable soup with meatballs, which can be cooked in a saucepan or in a slow cooker.


Minced lamb - 300-350 g

Water - 1-1.2 L

Potatoes - 2 pcs.

Zucchini and / or eggplant - 1 pc. / 150 g

Carrots - 1 pc. / 100 g

Bow - 1 head

Bulgarian pepper - 1 pc.

Vegetable oil - 1 tablespoon for frying

Adjika sauce or seasoning - about 1 tsp.

Garlic or Svan salt - to taste

Peppers to taste

About the aroma coming from this soup, my husband usually asks: "Shurpa or canakhi?" - and I answer: "Almost!"

Indeed, the aroma and taste are very similar to these very tasty rich national dishes. But my soup is simpler and faster to prepare, due to the fact that it is not lumpy or bone-in meat, but just minced meat.

For the lamb meatball soup, prepare the ingredients listed for the recipe. I will show the recipe using the example of cooking in a multicooker.

Add a little salt and garlic or Svan salt to the minced lamb. Form round blanks - meatballs.

Boil these meatballs first. To do this, put them in boiling water and cook after floating for about five minutes. Then the meatballs must be fished out and set aside, and the resulting rich broth must be used for the soup. Long-term cooking makes meatballs harder or less juicy. I didn't think about it before, but having tried it once, now I try to catch them in time.

Pour vegetable oil into the multicooker bowl and send finely chopped onions and carrots, lightly salt. Set the mode "extinguishing 1 hour". First, the multicooker will heat up for about ten minutes almost to the frying mode and these vegetables will brown well. Stir them a couple of times.

Next, send the zucchini and peppers, cut into cubes. Add a spoonful of adjika sauce.

Simmer everything together for five minutes or a little longer with stirring.

Pour the meatball broth into the multicooker bowl and when it boils, add the diced potatoes.

After the sound signal, the soup is ready, taste it and add salt to taste, add Svan salt or crushed garlic. Return the meatballs to the soup and let it brew for five minutes.
