I tried many different options for cooking my favorite dish, but Georgian okroshka became a real discovery for me. It has little in common with my usual dish, but nevertheless it is very tasty, as well as light, dietary. To be honest, I'm not a big fan of fresh cilantro, although I often add ground coriander to many dishes. However, cilantro is more than appropriate here, and the result is an excellent dish with a bright Georgian touch for lunch or dinner.

Prepare all the ingredients for the Georgian okroshka. There are not so many of them. If it is difficult to find yogurt in your city, then you can use low-fat yogurt. You can also take kefir, but it is a more "aggressive" product, while yogurt is more delicate. Beef can be low-fat or completely fat-free.

Wash fresh cucumbers and cut on both sides. Check for bitterness. If the skin is too tough for the cucumbers, it is best to cut it off with a peeler. Cut the cucumbers into small cubes. Immediately, you can put beef to cook in salted water with spices and herbs.

Fresh herbs - cilantro and parsley - rinse with running water. You can cut off the stems and finely chop the leaves.

Send chopped cucumbers to a deep bowl and send chopped fragrant greens to them.

Season with salt and spices to taste.

Pour the chilled yogurt over the cucumbers and herbs, stir and leave until.

After 25-30 minutes of boiling the beef, remove it from the broth. The broth itself can be used to make a soup, side dish, or sauce. Cool the meat and cut into small pieces.

Put a few pieces of boiled beef in a bowl.

Pour the fragrant yogurt, cucumber and herb dressing over the beef. Stir and serve. You can serve a piece of bread or lavash with Georgian okroshka.

If you want okroshka to be cold, chill the yogurt with herbs and cucumber in advance, or put a couple of ice cubes into a plate before serving.
