The first courses of chicken offal have a rich and rich broth, while absolutely low-fat. Today we are preparing a soup with chicken necks and noodles. We offer a more dietary version of the soup, where all vegetables will be added raw without preliminary sautéing in oil. Use noodles from the highest grades of wheat.

After cooking, the necks do not need to be cleaned; it is better to serve them as a whole to everyone on a plate. The necks are very soft and juicy, it is a pleasure to eat them with a bite with soup.

Place a pot of water on the hotplate. Rinse the necks, cut off the film, throw in boiling water, boil for 2 minutes, drain the first broth, fill the necks with a new portion of water. After boiling, salt the broth, reduce the heat, cook the necks for about 25 minutes. If foam appears on the surface of the broth, remove it with a slotted spoon.

Peel the potatoes from the top layer, rinse, cut into medium-sized cubes.

Remove the skin from the carrots and onions, wash the vegetables, grate the carrots on a coarse grater, chop the onion with a knife.

Put all the chopped vegetables into the broth, cook for about 20 minutes, until the potatoes are tender. Add spices - bay leaves, peppercorns, or other spices to taste.

Break the noodles into shorter pieces, put them in the soup, cook for 2 minutes, no more, it will come to readiness in hot broth. Rinse the greens, chop finely, throw into the soup at the very end. Bring the soup to the desired taste by adding salt and pepper. Be sure to boil it for one minute, then remove from heat, let it brew under the lid.

Chicken neck soup with noodles is ready. Pour it into small plates.
