Delicious rich beetroot soup with meatballs that will diversify your meals.
Ingredients
Minced turkey - 300 g
Rice - 80 g
Beets - 0.5 pcs.
Potatoes - 2-3 pcs.
Carrots - 1 pc.
Sweet pepper - 1 pc.
Tomato - 1-2 pcs.
Onions - 1 pc.
Provencal herbs - 1 tsp
Salt, pepper - to taste
Vegetable oil - for frying
Water - 2 l
Bay leaf - 1-2 pcs.
Lemon juice - to taste

Meatball soups are always enjoyed in my family. Usually I prepare such soups with onions, carrots, potatoes and some kind of cereal, sometimes puree soups. This time I decided to cook beetroot soup and got to the point. Everything turned out to be very harmonious, the soup is hearty, thick and very tasty. I used turkey mince, but any will do.
To make beetroot soup with meatballs, prepare the required ingredients from the list.
Put the minced meat in a bowl, salt and pepper. Cut a large onion in half, chop and add to the minced meat. Stir the minced meat well and refrigerate while we prepare the rest.
Peel and dice potatoes.
Peel the beets, carrots and cut into cubes. Chop the other half of the onion. Pour water into a saucepan, put on fire and bring to a boil. Pour washed rice and potatoes into the water.
While the rice and potatoes are boiling, prepare the frying. Heat vegetable oil in a frying pan, add onion and fry it a little. Then add beets and carrots. Pour 50 ml of broth from the pan, cover the pan with a lid and simmer for 10 minutes.
Grate the tomatoes on a grater, dice the bell peppers. After a while, add tomato and pepper to the frying, add salt and pepper, add Provencal herbs and bay leaf. Cook for another 5 minutes, covered. Tomato paste can be used instead of tomatoes.
Remove the minced meat from the refrigerator and form meatballs from it.
When rice and potatoes are cooked, add frying, salt the soup to taste and bring everything together to a boil.
Dip the meatballs into the soup, stir and cook for 5-7 minutes. At the very end, add lemon juice to the soup to taste, remove from heat and let it brew for 30 minutes.
Pour the prepared beetroot soup with meatballs into portions and serve for lunch.
