Rassolnik is a dish of Russian cuisine. As a rule, it is cooked in meat broth, but you can also use water. In the second case, you only need to put in more vegetable oil. I propose to diversify this first course somewhat by adding mushrooms to the composition. It turns out new and tasty. Oddly enough, mushrooms are also perfectly combined with the rest of the ingredients, complementing them well.

To prepare pickle with mushrooms, we take the following products: any meat broth, carrots, onions, potatoes, rice, champignons, pickled or pickled cucumbers, vegetable oil, herbs, salt and pepper.

We clean, wash and chop the potatoes. Put in the meat broth. We put it on the stove and start cooking.

While the potatoes are boiling, peel the onions and carrots, wash and chop. Pour vegetable oil into a frying pan and simmer vegetables for 7-10 minutes.

After that, we send the carrots and onions to the pot with broth and potatoes. We wash the rice and put it in the boiling soup.

We clean the champignons, wash and cut them.

When potatoes, carrots, onions and rice are cooked, three pickled or pickled cucumbers on a grater. You need to take one large or two small cucumbers for this amount of ingredients.

Add mushrooms and cucumbers to the pan to the rest of the ingredients.

Cook the soup for another 10-15 minutes. Season with salt and pepper to taste.

Pickle with mushrooms is ready.

Serve for lunch as a first course. Delicious, fast and simple.
