Rabbit - 1/4 carcass

I really love rabbit meat and try to cook from it not only the second courses, as is most often accepted, but also the first ones. For example, you can cook a very tasty soup with a rabbit, no worse than chicken soup, and maybe even better in some way.
Everyone knows that rabbit meat is dietary, it contains an easily digestible protein, and besides that, it is very tasty. Therefore, the broth from rabbit meat will also have excellent taste. Now young vegetables are already on sale - onions, carrots and potatoes, so we will cook a delicious soup with them. Add a little rice to the soup, just a little spices so as not to clog the aroma and taste of the soup, and, of course, fresh herbs.
So, take everything you need and start making rabbit soup.
I had a small carcass of a young rabbit weighing just over 1.5 kilograms. For the soup, I took a quarter of a carcass and a liver, which is great for soup. Since the rabbit is very young, it does not have a specific smell, so I did not soak it. By the way, this is a very important point in order to cook a really tasty soup, the meat must be of good quality, so an adult or old rabbit will not be suitable for this. Either it will have to be soaked in water with vinegar for a long time, or simply used to prepare some other dish, but not soup. So, wash the meat, put it in a pot of water and put it on the fire. After boiling, remove the foam from the surface of the broth. Then put the peppercorns, one peeled onion and a quarter of carrots in the broth for a fragrant broth. We will cook the meat for about 40-50 minutes over low heat.
In the meantime, the broth is boiling, finely chop the onion and carrots.
We save them until transparent in vegetable oil in a frying pan.
After half an hour of cooking the broth, put one peeled potato and a bay leaf in it.
Cut the rest of the potatoes into cubes, rinse the rice several times until the water becomes clear.
Remove the boiled potato from the broth, check the meat for readiness by piercing it with a knife. If soft, add rice to the broth.
Five minutes after adding the rice, add potatoes and salt to the broth. Cook the soup until rice and potatoes are done.
When the rice and potatoes are ready, add the sautéed vegetables with the whole potatoes, boiled earlier, crushed in mashed potatoes into the soup. Also add chopped herbs to the soup and season with salt and pepper to taste. After a minute, remove the pan from the heat and let the soup brew for 20 minutes.
Ready-made rabbit soup can be poured into bowls and served.
